Recipe: Spinach and Berry Salad


This is my most favorite salad right now.  It's so delicious and so healthy and you just feel good eating it because you know how much good stuff you're packing into your system with just one scrumptious meal.  Here's how to make it:


In the bottom of a mixing bowl, combine raspberry preserves, balsamic vinegar, and olive oil.  Whisk to combine.


Add in fresh baby spinach, chopped.  And a handful of rainbow slaw (you can find this near the packaged salads in the produce department).


Then, the best part ... chopped strawberries, dried cranberries, and pumpkin seeds.


Oh mama.

And I love to add crumbled bleu cheese.  I realize bleu cheese often gets mixed reviews, so feel free to substitute with feta or even parmesan.  Or skip the cheese altogether if you're boring healthy like that.


Toss to coat.  And since I'm usually eating this as a meal, I like to add some grilled chicken.

Ingredients:
1 tsp. raspberry preserves 
1 tsp. balsamic vinegar
3 tsp. olive oil
3 handfuls of baby spinach, chopped
1 handful rainbow slaw (sometimes called broccoli slaw)
2-3 strawberries, chopped
1 tbsp. each: dried cranberries, pumpkin seeds, bleu cheese

Combine first three ingredients in the bottom of a mixing bowl: whisk to combine.  Add in remaining ingredients.  Toss to coat.  Enjoy!

  3. This looks so yummy! Now how can I hide the fruit and seed parts so my husband will eat it... Might just have to have it all to myself!
